(serves 6)
- cup olive oil
- cup self-raising flour
- 5 eggs, beaten
- 1 carrot, grated
- 2 sticks celery, sliced finely
- 2 spring onions (shallots), sliced
- 1 cup grated reduced-fat cheese
- 2 cups chopped spinach (packed)
- Freshly ground black pepper
Mix all ingredients together and pour into a greased quiche dish and bake at 180 degrees for 40 minutes or until set. Serve warm or cold.
