Description
An elongated cylindrical squash approx. 20-40cm long and 3-5cm in diameter. Colour can range from nearly black to dark green and pale green with grey and yellow. Flesh is white and crisp with small edible seeds. Related to squash, pumpkin and cucumber.
Selection, Storage & Handling
Look for glossy, unblemished skins and no soft areas.
Store in an airtight bag (preferably paper or cloth to prevent ‘sweating’) in refrigerator crisper. Use as soon after purchase as possible.
Nutritional Value
Excellent source of Vitamin C, low in fat and sugar, contains folate.
